3 Weeknight Dinner & Wine Pairings

Think you need to have some fancy meal to pair with your wine? Think again! 

In an effort to cut household spending, I've been doing some home cooking. I found 3 incredible recipes that I paired with some of my favorite wines. I hope these recommendations help spice up your weeknight dinner routine! 

Broiled Salmon & Lemony Couscous by @kalejunkie
Wine Pairing: Chardonnay

My husband and I are obsessed with this recipe. We typically have it on the menu EVERY week. It's just so easy to make, the salmon cooks perfectly, and it pairs with so many delicious wines. My top pick: Chardonnay! The couscous is bright with lemon but also rich with parmesan so you need a wine that can balance both acidity and richness. Chardonnay is perfect.

Miso Coconut Ramen with Salmon by @dana_conway
Wine Pairing: Pinot Noir

This is the newest recipe I've tried and I seriously impressed myself. One tip here different from the recipe: I broiled the salmon on high for 10 minutes on an oiled baking sheet rather than baking it. It makes the skin good and crispy! Pairing wise: the umami in the broth matches with the umami flavors of a Pinot Noir.

• Total Wine: Sandhi Sta. Rita Hills Pinot Noir

Farfalline in Carrot Miso Sauce by @thekitchenbymicole
Wine Pairing: Dry Riesling

I'm a sucker for a good pasta recipe, and this one definitely fits the bill! The carrot adds a hint of sweetness but then the parmesan and miso bring it right back to savory. There are so many pairing options with this wine but I'm actually going to go with something different than is shown in the picture. I think this dish would pair beautifully with a Dry Riesling. The wine's sharp acidity will contrast perfectly with the creamy pasta!
